What documents/insurance certificates are required to be able to have a cake stand at a country fair?

My girlfriend is wanting to put up a little cake stand at a country fair/market but she has never done it before and is unsure what documentation she would need. We know she would need a Food Hygiene Certificate but do not know what else. Would she also need some sort of insurance?? If you could please help and also let me know where se would need to go to get and documention and what type of insurance would be required I would be most grateful. Many thanks for any answers.

    It’s possible that you are going to need a sales tax number, in order to collect and pay sales tax. Insurance? Find out if you need it. Ask the organizers of the fair about that, since you may not. (If you do, ask what broker they use because generally they have a “deal” with them). Good luck. I almost forgot, the rent is going to be a “killer”.
